Ingredients

For Baati:

  • 2 cups whole wheat flour
  • 1/4 cup semolina (optional, for crispiness)
  • 1/4 cup ghee (clarified butter)
  • 1/2 tsp baking soda

For Dal (Mixed Lentils):

  • 1/4 cup toor dal (pigeon peas)
  • 1/4 cup chana dal (Bengal gram)
  • 1/4 cup moong dal (yellow lentils)
  • 1/4 cup urad dal (black gram)
  • 1/4 cup masoor dal (red lentils)
  • 2 tbsp ghee
  • 1 tsp cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 garlic cloves, minced
  • 1-inch ginger, grated
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

For Churma:

  • 1 cup whole wheat flour
  • 2 tbsp ghee
  • 1/2 cup powdered sugar or jaggery
  • 2-3 crushed cardamom pods
  • Chopped nuts (optional)

Steps to Make Dal Baati Churma

Step 1: Make the Baati

  • Combine whole wheat flour, semolina, baking soda, salt, and ghee in a bowl.
  • Add water gradually to knead a stiff dough.
  • Divide the dough into lemon-sized balls and flatten them slightly.
  • Preheat the oven to 180°C (350°F) or heat a tandoor.
  • Bake the baatis for 20-25 minutes or until golden brown, flipping midway. Alternatively, you can roast them on a gas flame using a wire rack.
  • Dip the baked baatis in melted ghee for extra flavor.

Step 2: Cook the Dal

  • Wash and soak all lentils for 30 minutes, then pressure cook them with 4 cups of water, turmeric, and salt for 3-4 whistles.
  • Heat ghee in a pan, add cumin seeds, and let them splutter.
  • Add chopped onion, garlic, and ginger, and sauté until golden brown.

  • Crush the baked balls into a coarse powder.
