Ingredients
For Baati:
- 2 cups whole wheat flour
- 1/4 cup semolina (optional, for crispiness)
- 1/4 cup ghee (clarified butter)
- 1/2 tsp baking soda
- 1/2 tsp salt

For Dal (Mixed Lentils):
- 1/4 cup toor dal (pigeon peas)
- 1/4 cup chana dal (Bengal gram)
- 1/4 cup moong dal (yellow lentils)
- 1/4 cup urad dal (black gram)
- 1/4 cup masoor dal (red lentils)
- 2 tbsp ghee
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 garlic cloves, minced
- 1-inch ginger, grated
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- Fresh coriander leaves for garnish
For Churma:
- 1 cup whole wheat flour
- 2 tbsp ghee
- 1/2 cup powdered sugar or jaggery
- 2-3 crushed cardamom pods
- Chopped nuts (optional)
Steps to Make Dal Baati Churma
Step 1: Make the Baati
- Combine whole wheat flour, semolina, baking soda, salt, and ghee in a bowl.
- Add water gradually to knead a stiff dough.
- Divide the dough into lemon-sized balls and flatten them slightly.
- Preheat the oven to 180°C (350°F) or heat a tandoor.
- Bake the baatis for 20-25 minutes or until golden brown, flipping midway. Alternatively, you can roast them on a gas flame using a wire rack.
- Dip the baked baatis in melted ghee for extra flavor.
Step 2: Cook the Dal
- Wash and soak all lentils for 30 minutes, then pressure cook them with 4 cups of water, turmeric, and salt for 3-4 whistles.
- Heat ghee in a pan, add cumin seeds, and let them splutter.
- Add chopped onion, garlic, and ginger, and sauté until golden brown.
- Add tomatoes, red chili powder, and coriander powder. Cook until the tomatoes soften.
- Mix in the cooked dal, adjust consistency with water, and simmer for 5-7 minutes.
- Add garam masala and garnish with coriander leaves.
Step 3: Prepare Churma
- Combine whole wheat flour and ghee to make a crumbly dough.
- Add a little water to form stiff dough balls and bake them like baatis.
- Crush the baked balls into a coarse powder.
- Mix in powdered sugar, cardamom, and chopped nuts.
