Making a perfect cup of filter coffee, especially the South Indian style, is an art that requires the right ingredients, equipment, and method. Here’s how to do it:
Ingredients:
2 tablespoons of freshly ground coffee powder (medium-coarse grind, preferably South Indian coffee blend with chicory)
1 cup of water
1 cup of whole milk (or as preferred)
Sugar to taste
Equipment:
Traditional South Indian filter coffee maker (two-piece metal filter with a perforated upper chamber and a lower collection chamber)
Stainless steel tumbler and dabarah (traditional coffee cup set, optional)
Steps to Make Filter Coffee:
1. Prepare the Coffee Filter:
Assemble the filter. Place the upper perforated chamber on top of the lower collection chamber. Add 2 tablespoons of coffee powder into the upper chamber and spread it evenly.
2. Add Hot Water:
Boil water and pour it slowly into the upper chamber, just enough to cover the coffee powder. Avoid overfilling. Cover the filter and let the water seep through the coffee grounds.
3. Brew the Decoction:
Allow the coffee to brew naturally. It may take 10–15 minutes for the decoction (strong coffee extract) to collect in the lower chamber. Avoid disturbing the process for a rich and flavorful brew.
4. Heat the Milk:
While the decoction brews, heat the milk in a saucepan. Ensure it is hot but not boiling.
5. Mix Coffee and Milk:
In a tumbler or cup, pour 2–3 tablespoons of decoction (adjust based on strength preference). Add hot milk to the decoction and mix well.
6. Sweeten to Taste:
Add sugar to taste and stir until it dissolves completely.
7. Froth the Coffee (Optional):
For an authentic South Indian experience, pour the coffee back and forth between a tumbler and a dabarah to create froth and mix the flavors evenly.
8. Serve:
Serve the coffee hot in a stainless steel tumbler or your favorite cup.
Enjoy your aromatic and perfectly balanced cup of filter coffee!
